Pink Sparkling Wine Fruit Salad

Need a new idea for Easter brunch?  How about a fruit salad with everyone's favorite ingredient?  WINE!  And not just any wine... sparkling wine!  Find those fun wine glasses that you hardly get a chance to use and serve up some fruit salads for your family.  For the kids - you can just skip the alcohol!  It's healthy and it's fun (for you adults!).  So while the kids are outside searching for eggs, you can watch will sipping your wine fruit salad.  :)

Pink Sparkling Wine Fruit Salad
Ingredients:
- 1 bottle of "pink" or rose sparkling wine (can substitute any sparkling wine here)
- 1 fresh pineapple peeled, cored, and sliced into small pieces (about 2 to 3 cups)
- 3 cups of freshly cut strawberries
- 1 cup blueberries
- 1 cup raspberries or blackberries
- 2 or 3 kiwis, peeled and sliced
- fresh mint sprigs

Directions:
Cut and combine all the fruit in a large serving bowl.  Fill wine glasses with individual servings of fruit salad.  Fill glass about 2/3's full with sparkling wine.  Top with mint sprigs.  Enjoy!  =)
